It brings back some memories of my early culinary career when I worked at the Velvet Turtle in the Bay Area. There's an amazing Pomeroy sauce made by searing anything from veal, chicken, prawns or scallops in a saute pan. Simply deglaze with dry vermouth, then add a pour of cream. Reduce a tad to sauce consistency and finish with a healthy swirl of mustard and lemon juice. The PERFECT entree for any meal. The price was very nice also. The sight of the Pomeroy crock is truly heart warming for anyone who appreciates their fine mustard! The price can be "hard to swallow", but this company was very reasonable compared to others.
